Cashew Glycemic Index (GI) - Is It High or Low?

Based on the International Tables of Glycemic Index, the glycemic index of cashews is 25.

Salted cashew nuts from Australia have a GI of 22±5. The glycemic index of organic, roasted, and salted cashew nuts from the UK is about 25±12.

The roasted and salted cashew nut from the UK has the highest glycemic index, about 27±9 (1). Cashew nuts are relatively high in carbohydrates. They contain 30g of carbohydrates per 100 g, of which 6g are sugars. 

According to a 2018 study, half of 300 participants with type 2 diabetes were on a cashew-enriched diet, and the other half were on a typical diabetes diet. After 12 weeks, those on the cashew-enriched diet had lower blood pressure and cholesterol levels.

Studies also show that cashews have no negative impact on blood glucose levels or weight (2).
