Couscous soup with vegetables has the Glycemic Index in the range of 57±4 (2).
As we can see above, the more fiber we add as vegetables, the more we decrease the glycemic index of a food.
When combined with protein and vegetables and consumed in moderation, it is okay for individuals with diabetes.
