Buckwheat Glycemic Index (GI) - Is It High or Low?

Buckwheat has a medium amount of carbohydrates, providing 19.94g, of which 17.24g are net carbohydrates.
Some studies have demonstrated various buckwheat glycemic Index (GI) levels. The reliable ones are described below.

According to the numbers from International tables of glycemic index and glycemic load values, buckwheat has a medium GI of 50±4 (1).

In contrast, buckwheat boiled in water with 2 g salt has a GI of 51±10 (2).

As our buckwheat GI value, we chose 51±10 as the GI of buckwheat, boiled in water with 2g of salt, and tested on healthy subjects.
