Buckwheat has a medium amount of carbs, providing 19.94g of carbs, of which 17.24g are net carbs.
A number of studies have demonstrated various Glycemic Index (GI) levels for buckwheat. The reliable ones are described below.

According to the numbers from International tables of glycemic index and glycemic load values, buckwheat has a medium GI of 50±4 (1).

In contrast, buckwheat boiled in water with 2 g salt has a GI of 51±10 (2).

As our buckwheat GI value, we chose 51±10 as the GI of buckwheat, boiled in water with 2g of salt, and tested on healthy subjects.
