What are the differences between chicory and ginger? Chicory is higher in folate, yet ginger is higher in copper, vitamin B6, magnesium, potassium, and manganese. Ginger's daily need coverage for copper is 19% more. Chicory has 3 times more folate than ginger. While chicory has 37µg of folate, ginger has only 11µg. We used Chicory, witloof, raw and Ginger root, raw types in this article.
